Home-made Pasta
The so called pasta fresca (home made noodles), made of flour 00 type (that is wheat flour very refined, used also for cakes), fresh hen's eggs and, sometimes, prime quality olive-oil, is beyond any comparison.
Drawn in a large and tiny and genuine ingredients rich foil (everyone has his likes, I prefer it a little thick), Pasta can be cut in the most fanciful ways: lasagne, tagliatelle, pappardelle, farfalle, maltagliati, strozzapreti.
Or, divided in large square pieces, it can be stuffed with meat or vegetables and closed like a wallet to obtain ravioli, cappelletti, tortellini, panzerotti, agnolotti, tortelli, pansotti.
It's very easy to prepare Pasta: you need only flour, new-laid hen's eggs and a good hand at proportioning ingredients.
